Attention talented Sous Chefs! Cape Fox Lodge is the premier destination in beautiful Ketchikan, Alaska. We have an immediate need for an experienced Sous Chef.The Sous Chef will assist the chef in day to day operations in the kitchen and will be responsible for scheduling on a weekly basis. Food quality and preparation times are the main focus of this position.The Sous Chef manages labor cost on an hourly basis in the back of house (BOH) starting with weekly scheduling to be approved by the chef. New staff training also is a focus for this position as the chef will be developing a detailed training system for line cooks and the Sous Chef will be in charge of seeing it through with new hires.

Additional duties include:

Inventory control and loss prevention.

Managing shift to shift operations in the kitchen and prep areas.

Assisting in developing new menus throughout the year

Attending a weekly managers' meeting with Food & Beverage Director, Manager on Duty, and Chef

Running the Kitchen from the Expo line in busy season and on special event nights
